Ice cream is a dessert loved around the world. It can be made many different ways using a vast array of flavoring. I have always loved learning about different cultures and their foods. When I learned that the people of India and the surrounding region enjoy eating an ice cream called Kulfi, I had to try it out for myself.
I meticulously searched recipes online and found that this dessert can be made different ways. I wanted to make this recipe using the least amount of ingredients as possible. I like to keep things simple. I found that using whole milk with just sugar and cardamom was the most basic form of this recipe.
I also found that Kulfi is commonly flavored with nuts and or mangos. While I enjoy mangos, I wanted to see if I could make this using strawberries instead. This might not be the most traditional ingredient for Kulfi but it was really nice.
One day I hope to travel to the region and try Kulfi from the experts.
Here is how I made my take on Kulfi:
Ingredients:
- 1 cup strawberry puree
- 1/8 cup sugar
- 1 liter whole milk
- 1 tablespoon cardamom
- 1/8 cup sugar

Directions:
- Start by adding strawberries and sugar to a pot and heat over medium heat until strawberries have reduced to a puree. Turn off heat and strain puree.
- In a wide bottom pot, add milk and heat on medium-low until it reduces to half its volume. Stir continuously.
- Turn off heat and add sugar, puree and cardamom. Stir in.
- Let cool to room temperature.
- Add small amounts of cardamom to the bottom of molds. Fill with reduced milk mixture and freeze 5-6 hours.
