How to Make Hand Pulled Cotton Candy | Dragon’s Beard Candy
See how to make homemade hand pulled cotton candy. This delightful dessert is also called Dragon’s Beard candy in some parts of the world. It involves making a candy base just shy of the hard crack stage and then working it slowly.
The first step is to make the candy puck. To do this you need to put sugar, water, corn syrup, vinegar, water and food coloring in a medium pot. Just heat until it reaches 269 degrees and turn off heat. Pour into a silicon mold if possible to let cool completely.
When the puck has cooled it should've hardened up a bit. Remove it from the mold and cover with corn starch. Gently work the puck until you are able to make a hole in the center. It should look like a donut at this stage. Then pull the candy while dipping in the corn starch to stretch the candy. Twist and continue pulling until you have very fine strands.
Serve as is or with nuts wrapped inside of it. I used my hand pulled cotton candy to decorate a cotton candy cheesecake I made.

Ingredients:
- 2 cups sugar
- 1/4 cup light corn syrup
- 1 tsp vinegar
- 1 cup water
- 3 drops food coloring
- 3 cups corn starch
Directions:
- Start by adding sugar, water, corn syrup, vinegar, water and food coloring in a medium pot. Heat until it reaches 269 degrees F then remove from heat.
- Pour into a silicon mold and let harden for about 4 hours. This will be the puck.
- Dip the puck in corn starch and form a hole in the middle. Gently pull the puck to make a large circle and twist periodically in a figure 8 pattern. Repeat until you are left with really fine strands.
