Christmas Cake Roll


Christmas time is the time of year that many choose to bake.  Whether you only bake around the holidays or if you bake all year long, nothing says love like fresh baked goods.  Cakes are fun and easy to make.  Cake rolls are perfect for shaping that holiday look for your desserts. 

Ingredients:

  • 1 box of white cake mix (plus ingredients)
  • Red and Green food coloring
  • Cake frosting
  • Peppermint extract
  • Candy canes for decorating

Directions:

First prepare the cake batter of your favorite white cake mix.  Separate into 2 bowls.  Add red food coloring to one bowl and green to the other.  Spray a cookie sheet with cooking spray and line it with parchment paper.  Pipe out each color in a horizontal pattern on a cookie sheet using a piping bag or plastic ziplock bag.  Bake in the oven for 10 minutes at 375 degrees.  When done, turn out onto a fresh piece of parchment paper.  While still warm, roll the cake into a roll folding in the parchment paper as you roll.  Allow cake to cool while rolled up (this will help it hold its shape).  Once cooled, unroll cake and add frosting.  Then roll cake up without the parchment paper.  Apply more frosting to the top of the cake and add crushed candy canes. 

This cake roll does take some time to complete but it isn’t difficult.  Decorate it using candy of your choice.
