Bacon Wrapped and cheese stuffed Meatloaf


If you love meat and cheese you will love this meatloaf.  This was the first time I tried to make this meal.  A meatloaf stuffed with cheese and bacon bits wrapped with bacon.  Its probably not a meal for those who resolved to loose weight for the New Year. 

Ingredients:

·        1 lb of ground beef
·        1 cup of bread crumbs
·        1 teaspoon of salt
·        1 teaspoon of pepper
·        1 egg
·        2 lbs of bacon
·        ¼ cup of BBQ sauce or ketchup
·        1 cup of shredded Mozzarella cheese
·        ¼ cup of brown sugar

Directions:

Prepare by pre-cooking about 4 slices of bacon then crumble into small pieces and set aside.  In a large bowl mix ground beef, bread crumbs, salt, pepper and egg.  Flatten mixture onto a clean surface and add cheese and bacon pieces to one side of the meat.  Roll meat up concealing cheese and bacon pieces.  Set aside and layout bacon into a basket weave pattern.  Place meat at one side and roll meat up with bacon on outside.  Rub brown sugar on top and bake in over for 90 minutes at 300 degrees.  Check ever 30 minutes.  When center of meat reaches a temperature of 160 or above using a meat thermometer, the meatloaf is done.  If you want the outside bacon to be crispier, place back in over and increase temperature to 475 for 5 more minutes. 

This meal will have the meat and cheese lovers in your family begging for more.
