No-Bake Chocolate Peanut Butter Cookies


While I am partial to baked goods, no-bake recipes appeal to me at times.  No-bake treats are great for those who don’t have ovens or just don’t want to fire up the oven on a hot summers’ day.  These treats are easy to make and tasty to eat.  

Ingredients:
  • 1 stick of butter (1/2 cup)
  • 2 cups sugar
  • 1/2 cup milk
  • 4 tablespoons cocoa powder
  • 1/2 cup creamy peanut butter
  • 2 teaspoons vanilla extract
  • 3 cups corn flakes (or quick cooking oats)

Directions:
  1. In a medium saucepan, combine butter, sugar, milk and cocoa powder.
  2. Heat over medium heat whisking until it boils, then allow to boil for 60 seconds.
  3. Remove from heat.
  4. Add vanilla extract and peanut butter whisking until smooth.
  5. Add corn flakes (or oats) stirring well.
  6. Let cool for 5-10 minutes until it starts to thicken. 
  7. Spoon out tablespoon fuels onto wax paper and place in refrigerator. (if too runny, allow to thicken longer)
