Homemade Hot Pockets

Growing up in the 1980’s and 1990’s Hot Pockets were a staple of my diet.  These easy frozen meals were perfect as an after school snack or a quick meal before heading out the door for baseball practice.

Hot Pocket’s came with a cardboard container used to help cook it in the microwave.  I used to love eating the cheese that always seeped out during cooking and stuck to the cardboard.

I decided to make homemade Hot Pockets to show how easy it is to make these from scratch.  The best part about making them from scratch is that you can put any filling you wish in them.  You can also mix and match ingredients.

Another benefit of making your own Hot Pocket from scratch is the freshness factor.  No need to freeze, just make and serve.

Ingredients:
     - refrigerated pizza crust
     - cheddar cheese
     - fully cooked diced ham
     - mozzarella cheese
     - pizza sauce
     - pepperoni
     - 1 egg for egg wash

Directions:
  1. Start by unwrapping pizza crust and cut into 6 equal squares.  Roll each square one-by-one to about 1/8 inch in thickness.
  2. Fill the center with a generous amount of different cheeses and ham.  Pinch in the sides as you fold the Hot Pocket.  Also pinch along the center.  Turn with seem side down on baking paper.
  3. Repeat step #2 with different toppings.
  4. In a small bowl add I egg and 1 teaspoon of water and mix well.  Cover each Hot Pocket with egg wash using a brush.
  5. Bake in oven for 15 minutes at 425 degrees F.
  6. Allow to cool for 3-4 minutes then serve.
