Peanut Butter Coconut Haystacks | No Bake Recipe


Craving a sweet dessert that you can make in a Jiffy?  

If yes, make these yummy treats to satisfy your cravings.  These peanut butter coconut haystacks only have a few ingredients and you probably already have everything you need in your kitchen cupboard.  

I made these for my friends and they loved them.  They are gluten free and you can make them any size you want.  

Ingredients:
     - 1 cup creamy peanut butter
     - 1/2 cup sugar
     - 1 teaspoon vanilla extract
     - dash of salt
     - 2 cups shredded coconut
     - chocolate 

Directions:
  1. In a large bowl, add the peanut butter and the sugar then microwave on high for 60 seconds.  
  2. Stir in the vanilla extract and salt.
  3. Mix in the coconut 1 cup at a time.
  4. Roll into tablespoon size balls and place on baking paper.  Refrigerate or freeze for 30 minutes.
  5. Melt some chocolate.
  6. Remove the balls from the refrigerator and dip in the chocolate.  Place back on baking paper and refrigerate for at least 15 minutes.

Whether you choose to cover them in chocolate or leave them uncovered, you will love them just the same.
