I used cream cheese frosting to top these cupcakes. Nothing beats homemade frosting. Wether you like cream cheese frosting or butter cream frosting either is a great choice.
I made these cupcakes as a way to raise awareness for the upcoming Polar Bear Plunge at Sandy Point State Park in Maryland on January 27, 2018. This charity event raises money for the Maryland Special Olympics by having donors enter the icy waters of the Chesapeake Bay in the middle of winter. I have “Taken the Plunge” for 6 of the last 7 years. Last year I was recovering from an illness so I couldn’t plunge but I still donated and attended the event. I encourage anyone to support this cause or other great charities.

Ingredients:
- box cupcake recipe (or your favorite recipe)
- 8oz cream cheese
- 8 Tbsp butter
- 1 tsp vanilla extract
- 8oz shredded coconut
- 6 regular marshmallows
- 12 mini marshmallows
- 24 chocolate chips
- melted chocolate
Directions:
- Start of by baking your cupcakes and allow them to cool completely.
- Make your cream cheese icing by blending cream cheese, butter and vanilla extract until smooth. Add powdered sugar.
- Cover cooled cupcakes with icing.
- Place coconut in a shallow dish and dipped iced cupcakes in them.
- Cut regular and mini marshmallows in half. Add 1 half regular marshmallow on the center of each cupcake.
- Add 2 halves of the mini marshmallows as the ears.
- Add 2 chocolate chips as the eyes.
- Melt chocolate and add to the large marshmallow as the nose.
