These Days more and more people are relying on energy drinks to supply them with enough energy to get them through the day. The popularity of energy drinks have sparked some controversy.
These energy drinks have more sugar than a typical soft drink and some have criticized these companies for not sufficiently warning consumers of the risks. The energy drink companies have a different take on this. They claim that their products are safe and contain sugar levels that are not harmful.
Whatever your views are about these energy drinks, you can't argue with the popularity of these drinks. One of the more popular energy drinks that have hit the market is Monster Energy Drink. Monster makes many different flavors and sponsors sporting events that young people watch such as extreme sports like skateboarding, motocross and TV shows like MTV’s Fantasy Factory.
So I decided to make a dessert that uses Monster Energy Drink in the ingredients. Not only is Monster in the cupcake ingredients, but it is also an ingredient in the frosting. So if you like Monster Energy Drink and want to make these, follow these directions below to make these easy treats that your friends will be jealous of.
Ingredients:
Cupcakes
- 1 box of white or lemon cake mix
- 1 teaspoon lemon extract
- 1 box of lemon pudding mix
- 1/2 cup vegetable oil
- 1 1/4 cup energy drink
- 3 large eggs
Frosting
- 1/2 cup of soften butter
- 8 oz cream cheese
- 2 teaspoons lemon zest
- 1 teaspoon vanilla extract
- 3 tablespoons Monster Energy Drink
- 4-5 cups powdered sugar
- Black and Green food coloring
Directions:
Cupcakes
- In a Medium bowl mix cake mix, lemon pudding, lemon extract, vegetable oil, energy erin and eggs.
- Fill cupcake liners 2/3 full and bake in oven at 350 degrees for 18-20 minutes until a toothpick can be inserted in the middle and come out clean.
- Allow cupcakes to cool completely.
Frosting
- Cream together butter and cream cheese until smooth
- Blend in lemon zest, vanilla extract and Monster Energy Drink
- Add powdered sugar 1 cup at a time until it reaches a batter consistency.
- divide 1/3 into one bowl and 2/3 in another
- Add green food coloring to the small bowl and black to the larger bowl
- Place green frosting in piping bag with a small tip (Wilton #14 tip)
- Cover cupcakes with black frosting
- Draw the Monster Logo on top of the black frosting with the green frosting
Then serve and enjoy.
