Christmas Cookie Cups


Christmas is in a few days so start your ovens!  It is bake season and you don’t want to head to your holiday parties with the same cookie that everyone else brings.  Make something a little different this year.  Make these fun sugar cookies shaped like cups.  

Here is what you need:

Ingredients:
  Sugar Cookies
     -1 bag/box of sugar cookie mix
     -1/3 cup softened butter
     -1 large egg
     -1 tablespoon flour
  Icing
     -4 tablespoons softened butter
     -1/2 cup light corn syrup
     -1 teaspoon vanilla extract
     -2 cups confectionary sugar
     -1-3 tablespoons milk

Directions:

  1. Start with your favorite sugar cookie recipe and preheat your oven to 350 degrees.
  2. Lightly grease a muffin tin and press the cookie dough into the bottom and sides of the muffin tin. 
  3. Bake for 10-12 minutes and immediately after removing them from the oven press the dough down with a small cup to form the cup shape.  
  4. Let cool completely and then remove from tin.
  5. Make your icing by mixing softened butter, corn syrup and vanilla extract in a medium bowl. 
  6. Add in confectionary sugar a little at a time.
  7. Add milk 1 tablespoons at a time as needed.  
  8. Fill cookie dough with icing and sprinkle with crushed candy canes for decorative purposes.
