Caramel Pumpkin Cheesecake Mini's


Nothing says autumn like the smell of pumpkin in the kitchen.  There are many dessert that can be made using pumpkin but making individual pumpkin cheesecakes will be the best choice for sure. 

Ingredients:
  • 10 Oreo Cookies, crushed
  • 2 tablespoons melted butter
  • 8 oz cream cheese softened
  • 1/2 cup sugar
  • 1/2 cup pumpkin puree
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 8 oz caramel
  • 12 candy pumpkins

Directions:
  1. Preheat oven to 350 degrees F.  Crush Oreos and mix well with butter.  Fill 12 cupcake liners with Oreo/butter mixture.  Bake for 10 minutes. 
  2. Beat cream cheese, sugar and pumpkin puree.  When smooth, beat in egg, vanilla, cinnamon and nutmeg.  Spoon into cupcake liners on top of the baked Oreo mixture.  Bake for 25-28 minutes until cheesecake is cooked throughout.   Let cool.
  3.   Melt caramels and pour over each mini cheesecake.  Top with a candy pumpkin.
