No Bake Key Lime Pie | Low Calorie


With the start of a new year comes new resolutions.  Some people resolve to get their finances in order or get more organized but most people resolve to loose weight or at least eat healthier in the new year.  

This is why I decided to make a dessert recipe that is low in calories.  I believe that totally cutting out desserts while on a diet only causes people to give up on their diets.  If you must eat something sweet, eat something that won’t sabotage your diet.  

This Key Lime Pie recipe is good because two of the three main ingredients are really low in calories.  Jello and Lite Cool Whip are low in calories.  

Ingredients:  
     - 1 package of sugar-free lime Jello
     - 1/2 cup boiling water
     - 1 8oz package of cream cheese softened (fat free)
     - 1 tablespoon lime juice
     - 1/2 a lime peel grated
     - 2 cups of cool whip or any whipped topping thawed 

Directions:
  1. In a small bowl, pour the boiling water over the Jello and stir until all the powered has dissolved.  
  2. In a large bowl, beat cream cheese until smooth then slowly add the dissolved Jello a little at a time.  
  3. Beat in lime juice and lime peel.  Fold in Cool Whip until evenly combined.   
  4. Spray a 9 inch pie pan with cooking spray.  Pour in pie filling and spread evenly.  Cover and refrigerate for 3-4 hours.
