Extreme Corn Dog


Growing up, I loved corn dogs.  My parents would buy those packaged corn dogs from one of those big club stores.  The box held about 50 corn dogs that were individually wrapped in plastic.  I would microwave 2 of them as an after school snack.  I loved corn dogs.

The other day I was thinking to myself how I could make a corn dog even better.  So I added a couple of ingredients I enjoy.  I had to workout just how to cook it though.  Needless to say… I figured it out.

Ingredients: 
     - 1 cup all-purpose flour
     - 1 cup cornmeal
     - pinch of salt
     - 1/4 cup sugar
     - 4 teaspoons baking powder
     - 1 large egg
     - 1 cup milk
     - 3 hotdogs
     - 6 strips bacon
     - 6-9 frozen mozzarella sticks

Directions:
  1. Pre-cook bacon about 1/2 to 3/4 the total time needed to cook it fully.
  2. In a medium/large bowl mix flour, cornmeal, sugar, salt baking powder, milk and egg until it becomes a thick batter. 
  3. Place wooden skewers 2/3 of the way through the hot dogs.  Wrap 2-3 frozen mozzarella sticks around each hot dog.  Wrap 2-3 pieces of bacon completely around the mozzarella sticks and the hot dogs.  Hold in place with more wooden skewers.  
  4. Fry at 350 F (180 C) for about 4 minutes each until batter is golden brown and mozzarella sticks just start to melt. 
  5. Drain on paper towels. 

This is an extreme recipe combining some of my favorite ingredients.  I hope you try this for yourself.
