Do you still remember the first time you ever tried fried ice cream? Have you ever tried fried ice cream?
When I was growing up there used to be a Mexican restaurant chain that sold the best fried ice cream. Sadly the rest of the food they sold wasn't very good. I would try to convince my parents to eat at this restaurant for the sole reason of eating this delicious dessert.
It has been many years since I've wrapped lips around a fried ice cream dessert. I decided to make this with a bit of a twist.
Ingredients:
- ice cream
- 2 cup cornflakes cereal
- 1 cup coconut flakes
- 1 tablespoon cinnamon
- 3 egg whites
- 1/4 cup sugar
- flour tortilla's
- toppings of your choice
For the tortilla sugar mixture
- 4 tablespoons sugar
- 2 tablespoons cinnamon
Directions:
- Start by scooping 6 ice cream balls onto a baking sheet. Place in the freezer for 30-60 minutes.
- In a large plastic bag, put in cornflakes and crush into small pieces. Add the coconut flakes and cinnamon and mix well. Pour into a shallow bowl.
- In a separate bowl add 3 egg whites and sugar then blend until frothy.
- Remove ice cream balls from freezer and first coat in the egg bowl then coat in the cornflakes bowl until all the ball is covered. Place back on baking sheet and freeze for at least 1-3 hours.
- In a large bag add sugar and cinnamon for the tortilla coating and mix well. Fry a flour tortilla at 375 degrees F for about 2 minutes until golden brown. Then coat the fried tortilla in the sugar mixture.
- Fry the coated ice cream balls for 10-15 seconds. No longer than 15 seconds. Drain on paper towels and add to the fried tortilla then cover with your favorite ice cream toppings and serve immediately.
