Looking for an over the top cake to make as a birthday cake or other special occasion? Look no further. I have the perfect cake for you. Well…it’s an ice cream cake but if you prefer, you can make it a traditional cake with only a few modifications. In fact, my inspiration for this ice cream cake came from a traditional Snickers cake made by fellow YouTuber Jen from Cookies, Cupcakes & Cardio. I will embed her cake below.
Ingredients:
- Ice cream (Vanilla & Chocolate)
- caramel
- nuts
- 2 cups heavy cream
- 1 teaspoon vanilla extract
- 1/4 cup confectionary sugar
- 1 cup heavy cream
- 2 cups chocolate chips
- Snickers bars
Directions:
- Start with a 9 inch spring form pan and line it with plastic wrap. Fill the bottom of the pan with vanilla ice cream about 2 inches high and press firmly. Cover the top of the ice cream with a layer of caramel and nuts. Place in the freezer for 1 hour.
- Remove from the freezer and fill about 2 inches of chocolate ice cream on top of the first layer and repeat topping it with caramel and nuts. Place in the freezer for another hour.
- Remove from the freezer and fill with another layer of vanilla ice cream. Place in the freezer over night.
- In a cold bowl, add heavy cream, vanilla and confectionary sugar and whisk on high until it is firm and becomes a frosting. Next, remove your ice cream cake from the freezer and separate the sides of the spring form pan. Place a thin layer of the frosting completely around the cake. Place back in freezer.
- In a microwavable dish, add heavy cream and microwave on high for 90 seconds. Add chocolate chips to the hot cream and let sit for 5 minutes. Next, stir until it reaches a thick chocolate gnash. Let cool before coating the ice cream cake.
- Decorate as your wish. Cover the top of the cake with the gnash. I colored some of my frosting a different color for contrast and topped the frosting with Snickers bars.
