Ice cream sandwiches are the perfect snack when you don’t want to go through the hassle of dirtying bowls but still want ice cream. There are many variations of ice cream sandwiches but homemade ones are the best. I have made ice cream sandwiches with Eggo’s, I’ve made them with brownies, and also with cookies.
Until now, I have never made an ice cream sandwich using homemade dark chocolate cookies and combining ice cream with edible cookie dough. These were so good and the sharpe contrast of flavors made this dessert taste amazing.
Here is what you need to make these:
Ingredients:
edible cookie dough recipe
- 8 tablespoons softened butter
- 3/4 cup brown sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 cup flour
- 2 tablespoons milk
- 1 cup chocolate chips
cookies
- 12 tablespoons softened butter
- 1 cup sugar
- 2/3 cup cocoa
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/4 cup flour

Directions:
- Start by blending sugar and butter together. Add egg, vanilla extract and cocoa. Slowly add flour.
- Wrap in plastic wrap and refrigerate.
- Roll out to 1/8 inch in thickness and cutout into squares.
- Place on baking sheet and bake for 12-15 minutes at 350 degrees F.
- Let cool.
- Cut cookie dough and ice cream block using the same cookie cutter.
- Add all the components and serve.
