Pumpkin Spice Cookies


Halloween is just around the corner and Christmas is not far off from that.  The baking season is in full force.  The trees outside are dropping their leaves and the smell of pumpkin spice fills the house and shops alike.   I have been very busy trying to film a lot of videos for the season for my FunFoodsYT Youtube channel.  
One of the best parts of this season is the smells of pumpkin spice.  Naturally when you combine the smells with the taste of an amazing cookie you are left with a fall favorite.  

Ingredients: 
cookies
     - 2 1/2 cups flour
     - 1 teaspoon baking soda 
     - 1 teaspoon baking powder
     - 1 teaspoon ground cinnamon                                                                  
     - 1/2 teaspoon nutmeg
     - 1 1/2 cups sugar
     - 8 tablespoons softened butter

     - 1 large egg
     - 1 teaspoon vanilla extract

icing
     - 1 cup confectionary sugar
     - 1/2 teaspoon vanilla extract
     - 1-2 tablespoons water

Directions:
  1. In a medium bowl, combine the flour, baking soda, baking powder, cinnamon, nutmeg and salt.  Whisk until well combined.
  2. In a large bowl, add butter and sugar and blend.  Add pumpkin, egg and vanilla extract then mix.
  3. Slowly mix in the wet ingredients (medium bowl) to the large bowl.
  4. Spoon out on baking sheet and bake at 350 F for 15-18 minutes.
  5. Let cool completely. 
  6. In a small bowl mix confectionary sugar, vanilla extract and water.  Fill into a piping bag or just spoon over cookies when cooled.
