Funnel cakes are fun treats that most people associate with carnivals and fairs. I absolutely love funnel cakes. In years past, I would look forward to the state fair for the main reason of getting my hands on a funnel cake.
I discovered how easy it was to make funnel cakes at home some time back, you can imagine how happy I was. There are many different ways to make them at home including using pancake batter.
A short time ago I was thinking about Halloween and fun recipes I could make for the occasion. Every year I try to make recipes that coincide with the current holiday. The last few years I was able to make a bunch of Halloween recipes including writing about the Top 5 Halloween Recipes to Make with Kids. I thought about funnel cakes and how they looked so much like monsters. I figured that I wouldn’t have to do much to them just add some colors and a few decorative touches.
Ingredients:
- 2 cups flour
- 1/4 cup sugar
- 1 1/2 teaspoons baking powder
- pinch salt
- 3 eggs beaten
- 1 teaspoon vanilla
- 1 1/2 cup milk
- food coloring (orange, purple and green)
- vegetable oil
- Marshmallows
- black writing gel
Directions:
- In a large bowl combine flour, sugar, baking powder and salt.
- In a separate medium bowl, add beaten eggs, vanilla extract and milk. Mix until well combined.
- Slowly add wet ingredients to dry while stirring.
- Divided into separate bowls and add food coloring to each.
- Fill a pan with oil and heat to 350 F.
- Using a funnel or cone shaped cup, drop about 1/4 cup of batter into the hot oil in a zig zag pattern. Fry for about 2 minutes then flip. Fry for 2 minutes more and drain on paper towels.
- Cut marshmallows into 1/4’s and decorate each funnel cake to look like eyes. Add black writing gel to look like the pupils of the eyes.
- Optional- sprinkle with confectionary sugar and serve.
