Strawberry Mousse Dessert


When it comes to desserts, nothing beats a light and airy mousse dessert.  While chocolate mousse is my favorite, strawberry is a close second.   Another great thing about mousse desserts is that they can be low in calories.  

When I make this recipe I like to divide it up into 2 ounce plastic shot classes.  This is a great way to control the portion size and ensure I don’t over indulge.  

Here is what you will need to make this:

Ingredients:
     - 1 cup heavy whipping cream
     - 1 tablespoon sugar
     - 1 cup strawberries
     - 1 tablespoon sugar (optional)
     - 1 cup strawberries for puree filling
     - 1 cup cool whip
     - whole strawberries for decorations. 

Directions: 
  1. Start by whisking heavy whipping cream in a large bowl.  Add sugar when cream starts to thicken.  When cream is thick and forms stiff peaks, set aside for later.
  2. In a blender, puree 1 cup of strawberries.  If you wish to add sugar you can add it at this time.
  3. Fold strawberry puree into cream.  Put in a piping bag and fill a shot glass about half full with it.
  4. Make another cup of strawberry puree and spread an even layer on top of the piped mousse.  Pipe more mousse on top of the puree layer.  Then pipe cool whip topping and decorate with whole strawberries.
